This is winemaker Dan O’Brian’s homage to his late mom, Gail, and great aunt, Doris, and both would be proud. Made entirely from Sonoma Valley Pinot Grigio, I was surprised by the wine’s chalky minerality, salty underpinning and vibrant acidity to complement its lemony flavor. It offers so much more than you’d expect from the varietal, which even from Italy can be limp and sad. Try with our chicken ragù bianco.
